Potato Bajji

Bajji is all time favourite snack for most people of south India. Especially in rainy days Hot crispy bhaji with hot tea or coffee is a wonderful combination. We can make many varieties of bajji with raw banana, potato, onion, bread, egg, pappad, chilli and some people make even in brinjal, bitter gourd,etc. What ever bajji it is, we can make with in few minutes. My all time favourite bajji is potato bajji. So I want to share the recipe with you people here. Enjoy your rainy day tea time with this potato bajji.

Ingredients

  • Potato – 1 (medium size. Thin sliced)
  • Gram Flour – 1 cup
  • Asafoetida – 1/2 teaspoon
  • Chilli powder – 1 1/2 teaspoon
  • Rice flour – 2 teaspoon
  • Baking soda – 1 pinch
  • salt – to taste
  • Oil – for frying

Preparation Method

  1. Take gram flour in a bowl. Add asafoetida, chilli powder, salt, baking soda and rice flour to it.

2. Mix it well. Add water little by little. The batter should be in dosa batter consistency. That is, the batter should not be too thick or too thin in consistency. Batter should not have lumps and must be smooth in texture.

3. Take the potato and slice it thin. Put the sliced potatoes in water. So it will remove the starch from potato.

4. Heat oil in a kadai. Take one piece of potato and dip both sides of it in the batter.

5. Drop it carefully in the hot oil. Flip over to other side once bajji puffs and the colour of the bajji changes. Cooking time for one bajji takes approximately 2 to 3 minutes.

6. Remove the bajji from oil and repeat the same with the remaining batter.
